A big thanks to everyone that came out and played with us last Sunday in the Greenhouse! It was a super fun afternoon with a great turnout of families that came ready to carve, play and eat!

A special thanks to Kim Botelho, Director of Education at Maria Mitchell Association, for face-painting many, many thrilling Halloween inspired designs and to Nicole Dupont for letting her precious "Doatie," the Nigerian Dwarf goat hang with us all afternoon!

Getting to Know the Perfect Potato- 
By some strange stroke of bad luck, potatoes have over the years developed a reputation for being "fattening" or unhealthy because they are "starchy".
In fact, starchy foods are a good source of energy and the main source of a range of nutrients in our diet. As well as starch (which is a type of carbohydrate, also referred to as a complex carbohydrate since it is made up of long chains of sugar molecules), they contain fiber, calcium, iron and B vitamins.
Some folks think starchy foods are fattening, but gram for gram they contain fewer than half the calories of fat. Really, it's all that butter, sour cream and bacon bits that are adding calories. 
 
 
 
 
The US Department of Agriculture has stated that “a diet of whole milk and potatoes would supply almost all of the food elements necessary for the maintenance of the human body.”
The potato itself is 99.9% fat free, and yet it is a nutrient dense food. It is an important dietary staple in over 130 countries.

Like our new Butternut Squash Pasta Sauce, perfect tossed with penne pasta, baby kale and cooked chicken or as a base for a Root Vegetable Lasagna. For something more decadent, thin with a bit of cream, add some grated gruyere or sharp cheddar cheese and BOOM you have Butternut Squash Mac and Cheese! You (and the kids!) would never tell there were tomatoes in there...
