Simple and Delicious Raw Corn Salad
Most Bartlett's employees agree that our corn is so good that you don't have to cook it. This salad is a hit in my house and really puts the spotlight on raw corn. Quantities are based on what you have, and how much you want of each ingredient.
Kernels cut off several ears of freshly picked raw corn.
Chopped scallions, red onion or shallot (or all three)
Chopped avocado
Chopped parsley
Chopped Cucumber
Juice and zest of lime
Seasoned Rice Vinegar
(or use citrus flavored seasoned rice vinegar)
Salt and Pepper
Toss together, adjust seasoning and serve.
Some crumbled Cotija or Feta cheese is nice sprinkled on top, too
And now that the weather has cooled a bit, turning on the oven doesn't seem to be such a bad idea.  This Tomato Tart is simple enough to make on a weeknight, and elegant enough to serve to guests.
Using colorful heirloom tomatoes makes it beautiful AND delicious!
Tomato Tart
Thaw puff pastry on a parchment lined baking sheet
Carefully arrange thinly sliced tomatoes (heirlooms, cherrys, whatever you have) in a single layer, leaving room at the edge.
Sprinkle with your favorite combination of cheeses - use feta, goat, mozzarella, parmesan or pecorino romano
Add some chopped fresh herbs like chives, parsley, rosemary, tarragon
Drizzle with a little olive oil
Add salt and pepper to taste
Bake at 400 degrees til the cheese melts and the pastry
puffs up. - About 15 minutes
