Creating a Cheese Platter is a simple task, provided that you have a few tips and tricks up your sleeve.
How many guests?
For cheese as an hors d’ouerve, plan to serve 1 to 2 ounces of cheese per person.
How many different cheeses are enough?
No less than 3, No more than 5
Any more than five and the cheeses will get lost flavor-wise on people’s palates.
Choosing Your Cheeses:
Option 1: Go with Texture-
Semi-Soft-Blue, Washed Rind, Italian Toma
Hard-Alpine style, Italian Parmigiano, Sharp Cheddar, Aged Gouda
Option 2: Go with Color-
White- Triple Cream, Pecorino, Goat Cheese
Blue- Blue Cheese!
Yellow or Orange- Beemster, Ascutney Mountain, Cotswold
Option 3: Go with Milk Type-
Choose between Goat's, Cow's, Sheep's
or Buffalo milk for a guaranteed interesting and diverse cheese plate
Be sure to experiment with different accompaniments to the cheeses such a nuts, dried fruits, olives and preserves.
My 3 essentials are:
Black Berries or Raspberries
Serve cheese with an assortment of crackers. Everyone will find a favorite!
For a heartier presentation, serve along side assorted charcuterie such as prosciutto, pates, or chicken liver mousse.
