As we wind down our community-wide focus on Meatless Monday, we hope that you will help us thank our partners. They posted on social media, created vegetarian specials, put up posters and table tents, and more. Maybe you'll visit some of them in the coming weeks - so be sure to mention that you participate in Meatless Mondays with Bedford 2020, and you appreciate their support. Vegetarian Recipes
Beans are great protein source and versatile. If you have an Instant Pot, dried beans are ready in a fraction of the time of traditional soaking and cooking methods. Pictured here, a local resident gives a cheer for a recipe we provided a few weeks ago, Baked Southwest Egg Rolls, with protein-rich black beans. Another neighbor, Babs Johnson, shared this one for Beans and Garlic Toast in Broth which uses white beans.
